Frozen Yogurt Snack to Curb the Craving!

This snack is perfect for that afternoon craving we all get. You know the one that reminds us, our metabolism actually is working! So, rather than filling that craving with a candy bar or soda from the vending machine or ice cream from the freezer, grab one of these yogurt snacks. Curb the craving by enjoying the sweet fruit while also getting a little protein and give your body to work with until dinner time!
This is a Weight Watchers friendly recipe coming in at just 3 Smart Points per serving! It's one of my favorite go to as a busy mom. They're fun to prepare with my littles and it is something everyone likes!

We choose to buy plain greek yogurt at our house because we want to know what our yogurt is being flavored by! In this particular recipe we used Lemon Vitality Essential Oil and honey to bring a vibrant flavor to the yogurt. Before essential oils were introduced to our family, we would never have thought about flavoring our own yogurt. When I was grocery shopping one day I picked up my usual yogurt, and instead of putting it straight in my cart, I turned it around to check out the label. "Lemon Flavoring" is what it read. I thought to myself, "Hmm, where are they getting this so called lemon flavoring from?" Since I did not know the answer to that question, I didn't put it in the cart! I looked for other options while there staring the wall of yogurt that was standing in front of me. I decided I would try getting just the plain yogurt and flavoring it myself with something I know honey, and lemon, just lemon. You'll see the steps used to make our lemon flavored yogurt in this delicious frozen snack cup!
Strawberry-Lemon Yogurt Cups

Strawberry-Lemon Yogurt Cups
Yields: 10 Weight Watchers Smart Points Value/Serving: 3 SP
Time to Prepare: 10 Min. Time in Freezer: 2 hr
Ingredients:
2 C Plain Non-Fat Greek Yogurt
5 Drops Lemon Vitality Essential Oil
2 Tbsp Honey (Maple Syrup for a vegan option)
1/2 C Stawberries (chopped)
1/4 C Almonds (chopped)
1 Tbsp Extra Virgin Coconut Oil
1/4 C Granola
1 Tbsp Organic Sugar / Truvia
10 Aluminum Foil Muffin Cups or Silicon Muffin Cups
Prepare the muffin pan by setting the muffin tins in 10 of the wells.
Melt coconut oil in a small microwave safe bowl for 30 seconds. Add sugar, granola and almonds to melted oil and mix well. In a medium sized bowl stir together yogurt, honey and lemon vitality.
Spoon even amounts of the granola, almond mixture into each of the cups. Layer the yogurt on top of the granola. Top each cup with chopped strawberries. Be sure to press them into the yogurt a little so that they freeze with the cup!
Put the muffin pan in the freezer for a couple hours to freeze. Pull out a yogurt cup whenever you are ready to enjoy a light fulfilling snack! (Some may want to let it sit out for a couple minutes to soften a little before eating)
